Caprese Mini Frittatas

These Caprese Mini Frittatas are packed with protein and bursting with fresh, feel-good flavour with roasted cherry tomatoes, fragrant basil, vibrant pesto and mozzarella, all baked into perfectly bite-sized frittatas!

🍅What is Caprese Salad? Caprese salad is a classic Italian combination dish that is traditionally made with fresh tomatoes, mozzarella, basil and a drizzle of olive oil!

Ingredients

  • 400g cherry tomatoes 
  • 1 tbsp olive oil 
  • 2 tsp chilli flakes 
  • 1 tsp salt 
  • 6 tbsp basil pesto 
  • 1 cup shredded mozzarella 
  • 6 eggs 
  • 1 cup low fat cottage cheese 
  • 2 scoops Tasteless Protein Collagen by Feel Good Protein 
  • 1 cup fresh basil

Method  

  1. Preheat the oven to 200°C. 
  2. Add the cherry tomatoes, olive oil, chilli flakes, and salt to a roasting tray. Roast for 20–25 minutes, then remove from the oven. 
  3. Crack the eggs into a bowl and whisk together with the cottage cheese, protein powder, salt, and chilli flakes until well combined. Set aside. 
  4. Reduce the oven temperature to 160°C. Line a 12-cup muffin tin with muffin liners. 
  5. Evenly divide the roasted tomatoes, chopped basil, basil pesto, and ¾ cup shredded mozzarella between the muffin liners. 
  6. Pour the egg mixture evenly into each muffin cup, filling each about three-quarters full. 
  7. Sprinkle the remaining mozzarella over the tops. Bake for 20–25 minutes, or until the frittatas are set and lightly golden. 
  8. Allow to cool slightly, then enjoy your Caprese Mini Frittatas!
