Caprese Mini Frittatas
These Caprese Mini Frittatas are an easy, delicious option for a spring weeknight dinner, meal prep or a fuss-free lunch that the whole family can enjoy!
These Caprese Mini Frittatas are packed with protein and bursting with fresh, feel-good flavour with roasted cherry tomatoes, fragrant basil, vibrant pesto and mozzarella, all baked into perfectly bite-sized frittatas!
🍅What is Caprese Salad? Caprese salad is a classic Italian combination dish that is traditionally made with fresh tomatoes, mozzarella, basil and a drizzle of olive oil!
Ingredients
- 400g cherry tomatoes
- 1 tbsp olive oil
- 2 tsp chilli flakes
- 1 tsp salt
- 6 tbsp basil pesto
- 1 cup shredded mozzarella
- 6 eggs
- 1 cup low fat cottage cheese
- 2 scoops Tasteless Protein Collagen by Feel Good Protein
- 1 cup fresh basil

Method
- Preheat the oven to 200°C.
- Add the cherry tomatoes, olive oil, chilli flakes, and salt to a roasting tray. Roast for 20–25 minutes, then remove from the oven.
- Crack the eggs into a bowl and whisk together with the cottage cheese, protein powder, salt, and chilli flakes until well combined. Set aside.
- Reduce the oven temperature to 160°C. Line a 12-cup muffin tin with muffin liners.
- Evenly divide the roasted tomatoes, chopped basil, basil pesto, and ¾ cup shredded mozzarella between the muffin liners.
- Pour the egg mixture evenly into each muffin cup, filling each about three-quarters full.
- Sprinkle the remaining mozzarella over the tops. Bake for 20–25 minutes, or until the frittatas are set and lightly golden.
- Allow to cool slightly, then enjoy your Caprese Mini Frittatas!
