Crispy Rice Paper Burritos

These Crispy Rice Paper Burritos are a gluten-free, high protein twist on the classic burrito with a crispy dumpling-inspired finish!
Packed with savoury beef mince, fresh vegetables, and melted cheese, they're crunchy on the outside, loaded with flavour on the inside, and perfect for an easy dinner or meal prep lunch.
Ingredients
- 3 scoops Tasteless Protein Collagen by Feel Good Protein
- 1 tbsp All Natural Seasoning by Mingle (Backyard Barbeque)
- 1 tsp All Natural Seasoning by Mingle (Everything Bagel)
- 3 rice paper sheets
- 250g lean beef mince
- 1 medium red capsicum
- 3 tbsp corn kernels
- 1 tbsp light soy sauce
- 2 eggs
- 1 avocado
- ½ cup grated cheese

Method
- Dice the capsicum and quarter the avocado into small cubes and set aside.
- Heat a small frying pan over medium heat. Add the beef mince and protein powder, breaking up the mince as it cooks.
- Once the beef is browned and cooked through, stir in the Backyard Barbeque Seasoning, followed by the soy sauce. Mix well, then remove from the heat.
- Crack the eggs onto a large plate or shallow bowl and whisk until combined.
- Dip one sheet of rice paper into the egg mixture, coating both sides until it softens. Remove and press the sides of a small bowl and repeat with remaining 2 sheets.
- Fill each bowl with a third of the grated cheese, the beef mixture, corn kernels, capsicum, and avocado. Fold the rice paper tightly over the filling to form a sealed parcel.
- Repeat with the remaining rice paper sheets and filling.
- Heat a clean frying pan over medium heat and place the parcels seam side down. Sprinkle the tops with Everything Bagel Seasoning.
- Cook for 3 to 4 minutes per side, or until the rice paper is golden, crispy, and the cheese has melted.
