Salted Caramel Protein Cups

Ingredients
- 12 gyoza wrappers
- 200g Medjool dates, pitted
- 150g Protein Yoghurt Pouch by Pauls Plus+ (Lemon Cheesecake)
- 3 scoops Tasteless Protein Collagen by Feel Good Protein
- 1 tsp vanilla extract
- ¼ tsp salt
- 120g Sugar Free Choc Baking Chips by Noshu
- 2 tbsp almond milk

Method
- Preheat the oven to 180°C (fan forced) and lightly spray a 12-hole muffin tin with non-stick cooking spray. Press one gyoza wrapper into each muffin hole, gently shaping it against the sides.
- Bake for 8 to 10 minutes, or until the wrappers are golden and crisp. Remove from the oven and allow them to cool completely.
- Place the dates in a heatproof bowl and pour over 120ml of boiling water. Cover and leave to soak for 10 to 15 minutes until softened.
- Transfer the softened dates and the soaking liquid to a blender. Add the protein powder, yoghurt, vanilla extract and salt, then blend until smooth and creamy.
- Add the chocolate chips and almond milk to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.
- Spoon the salted caramel filling evenly between the cooled gyoza cups, then top each one with the melted chocolate.
- Refrigerate for at least 2 hours, or until the chocolate has set.
