Ingredients
160 g Wholemeal flour
350 g rolled oats (old fashioned oats)
100 g sugar substitute by Truvia for Baking
1.5 teaspoon baking powder
1 teaspoon bicarb soda
0.25 teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground nutmeg
1 whole egg
60 ml melted butter
1 teaspoon vanilla extract
4 scoops of Tasteless Protein by Feel Good Protein
3 whole ripe bananas (about 1 ½ cups mashed)
¼ cup Almond Milk (or your choice of milk)
Topping
2 tablespoons brown sugar by Truvia for Baking
120 g rolled oats (old fashioned oats)
0.25 teaspoon cinnamon
2 tablespoons melted butter
Method
1. Preheat oven to 180°C.
2. Dry ingredients: In a large bowl mix together; 160 g wholemeal flour, 350 g rolled oats, 100 g sugar, 1.5 teaspoon baking powder, 1 teaspoon bicarb soda, 1 teaspoon cinnamon, ¼ teaspoon ground nutmeg, 0.25 teaspoon salt.
3. Wet ingredients: In a smaller bowl, mix 1 egg, 60ml melted butter and 1 teaspoon vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir.
5. Add 4 scoops of Tasteless Protein and stir again.
6. In a separate bowl, mash bananas with a fork and then add 1/4 cup of milk and mix well together. Pour that mixture into the bowl with the rest of the ingredients.
7. Divide into 12 sprayed or paper-lined muffin tins.
8. In another bowl combine the topping ingredients: 120 g rolled oats, 0.25 teaspoon cinnamon, 2 tablespoons brown sugar substitute, 2 tablespoons melted butter.
9. Sprinkle over muffin batter.
10. Bake for approximately 18-20 minutes.
11. Remove from the oven and enjoy your delicious Banana And Oat Protein Muffins.
