We’ve put a Feel Good twist on the viral apple pancakes! Think of the original but with a high-protein, low-carb twist. The sweet apples wrapped in the golden pancake are a match made in heaven. Enjoy these Pancake Dipped Apples.
Ingredients
2 large eggs
60g Greek yoghurt
2 scoops Whey Protein by Feel Good Protein (Vanilla Ice Cream)
2 tbsp almond meal
1 tsp baking powder
½ tsp cinnamon (optional)
A splash of vanilla essence
1–2 tbsp milk or water (to thin, if needed)
1 large granny smith apple
Method
- Wash and slice the apple into 4 mm slices. Place in a bowl of water to stop browning.
- In a blender or bowl, whisk together eggs, yoghurt, whey protein, almond meal, baking powder, cinnamon, and vanilla essence until smooth.
- Remove apple slices from the water and pat dry.
- Dip apple slices into the pancake batter.
- Heat a non-stick pan on low, lightly grease it, and drop the batter-covered apples into the pan.
- Cook for 2–3 minutes until edges brown, flip, and cook another minute until golden.
- Serve warm with sugar-free syrup, fresh berries, or Greek yoghurt. Enjoy your Pancake Dipped Apples!
