Ingredients
1 cup almond flour
1/4 cup coconut flour
4 scoops Tasteless Protein by Feel Good Protein
1/3 cup powdered Truvia (for the slice)
1/4 cup powdered Truvia (for the topping)
Zest of 1 lemon
1/4 cup fresh lemon juice
1/4 cup melted butter
2 large eggs
1 tsp vanilla essence
1 tsp baking powder
Pinch of salt
2–3 tbsp fresh lemon juice (adjust for desired consistency)
Method
- Preheat the oven to 175°C and line a tin with baking paper.
- In a bowl, whisk together the almond meal, coconut flour, Tasteless Protein, powdered Truvia, lemon zest, baking powder, and salt.
- In a separate bowl, mix the melted butter, eggs, lemon juice, and vanilla essence until smooth.
- Combine the wet ingredients with the dry ingredients and stir until fully mixed. The batter should be thick but spreadable.
- Spread the batter evenly into the prepared baking tin.
- Bake for 18–22 minutes or until the edges are lightly golden and a skewer inserted in the centre comes out clean.
- Allow the bars to cool completely before adding the glaze.
- In a small bowl, whisk together the powdered Truvia and lemon juice until smooth and pourable. Adjust the lemon juice to reach your desired consistency.
- Drizzle the glaze over and spread evenly.
- Refrigerate for 20–30 minutes to set the glaze.
