It’s officially spooky season, which means it’s time to whip up some deliciously creepy creations! This Blueberry Monster Cheesecake is creamy, rich, and topped with playful candy eyeballs that bring it to life. Whether you’re hosting a Halloween party or just feeling festive, this dessert is guaranteed to be the star of your spooky spread.

Ingredients

Base
1 cup almond flour
1/3 cup sugar substitute
¼ cup unsweetened cocoa powder
2 tbsp coconut oil

Filling
4 eggs
1 cup low-fat cottage cheese
250g cream cheese
4 scoops Tasteless Protein by Feel Good Protein
1 punnet of blueberries
1 tbsp vanilla extract
1/3 cup sugar substitute

Topping
Eyeball candy
250g cream cheese, ¼ cup sugar-free icing mixture, and green food colouring for the monster’s hair!

Method

  1. Preheat the oven to 160°C.
  2. In a bowl, mix almond flour, sugar substitute, and cocoa powder. Melt the coconut oil and stir it in until the mixture is crumbly but sticks together.
  3. Line a small springform tin with baking paper.
  4. Press the mixture firmly into the tin and bake for 15 minutes.
  5. Blend eggs, cottage cheese, cream cheese, protein powder, blueberries, and vanilla extract until smooth. For a smoother texture, blend in two batches and combine before pouring over the base.
  6. Pour the filling over the base and bake for 50–60 minutes. For a creamy result, place a tray of water in the oven to create steam.
  7. Let the cheesecake cool completely. Decorate with eyeball candies and ‘monster hair’ made from cream cheese mixed with sugar-free icing and green food colouring.
  8. Refrigerate until ready to serve, then enjoy your Blueberry Monster Cheesecake!
