A lighter, make-ahead version of cookie dough with a fun spin! These Rum Coffee Cookie Dough Dessert Cups are layered with gooey cookie dough, creamy rum coffee yoghurt, and a pop of fresh strawberries. Each cup is festive, indulgent, and the perfect Christmas treat.
Ingredients
Cookie Dough
- ½ cup almond flour
- ¼ tsp nutmeg and cinnamon spice
Yoghurt Filling
- 2 tsp gelatine powder
- 1 cup Greek yoghurt
- 1/3 cup granulated sugar substitute
Toppings
- ½ cup fresh strawberries, sliced
- Whipped cream or your favourite toppings

Method
- In a bowl, add almond flour, whey protein, nutmeg, and cinnamon and mix until well combined. Add 2 tbsp water and mix until a cookie dough consistency is formed.
- Layer the cookie dough mixture into the base of your serving bowls in equal portions, add a layer of strawberries, and set aside.
- In a bowl, sprinkle the gelatine onto 2 tbsp of boiling water and let it sit for 3 minutes to bloom. Mix well and set aside.
- In a cup, stir flavoured instant coffee into 60mls of water until dissolved, then stir in tasteless protein collagen powder until well mixed.
- In a bowl, add Greek yoghurt, granulated sweetener, and coffee mixture and mix until smooth. Add in gelatine mix and stir until combined.
- Pour the yoghurt filling over the base and sliced strawberries.
- Leave to cool in the fridge for 1 – 2 hours before serving
- Top with whipped cream and strawberries and enjoy your Rum Coffee Cookie Dough Dessert Cups!
