Chocolate Coffee Protein Gummies

Made with tasteless protein, festive gingerbread flavoured instant coffee, and coated in a silky sugar-free chocolate, you’ll be craving this low-prep dessert all summer long.

Chocolate Coating

  • 140g Noshu 95% Sugar Free Choc Baking Chips 
  • 1 tbsp coconut oil

Method

  1. In a small microwave-safe bowl, sprinkle the gelatine powder over 50ml water. Stir until a thick, crystallised consistency forms. Microwave in 15-second bursts, stirring between each, until fully dissolved. Do not allow it to boil. 
  1. In a jug, dissolve the flavoured instant coffee in 50ml boiling water. Set aside. 
  1. In a separate bowl, add 400ml water, tasteless protein collagen, and tasteless fibre. Using an electric whisk, mix until the dry ingredients are fully dissolved.
  1. Add 2 pumps of zero sugar syrup then pour in the prepared coffee mixture. Stir to combine. 
  1. Add the dissolved gelatine to the bowl and stir thoroughly. If any clumps form, microwave the mixture in 10-second bursts, stirring between each, until completely dissolved. 
  1. Line a 22” x 16” shallow baking tray with baking paper. Pour the mixture into the tray and refrigerate until firm. 
  1. Once set, slice into bite-sized pieces and transfer the gummies to the freezer for 30 minutes before coating with chocolate. 
  1. To make the chocolate coating, melt the sugar-free chocolate chips with the coconut oil in the microwave in 15-second intervals, stirring between each, until smooth. 
  1. Using tongs, dip each chilled gummy into the melted chocolate, coating to your preference. The chocolate will set quickly on the cold gummies.
