Ingredients
1/2 cup rolled oats
1/3 cup desiccated coconut
1/2 cup almond flour
1 teaspoon bicarbonate of soda
1/4 cup brown sugar replacement (Truvia For Baking)
2 tablespoons butter
2 tablespoons sugar-free maple syrup
3 scoops Tasteless Protein by Feel Good Protein
1 tablespoon boiling water
Method
Prepare
1. Preheat your oven to 160°C. Line a baking tray with parchment paper and set it aside.
Dry ingredients
2. In a medium-sized bowl, combine the rolled oats, coconut, almond flour and Tasteless Protein by Feel Good Protein. Stir them together and set aside.
Wet ingredients
3. In a small saucepan over low heat, melt the butter and brown sugar substitute.
4. Add the maple syrup and let them melt together until smooth.
Combine wet and dry ingredients
5. Remove the melted butter and maple syrup mixture from heat.
6. Add the bicarbonate of soda to the butter, sugar, and maple syrup mix.
7. Pour this mixture immediately into the bowl of dry ingredients and stir until everything is nicely mixed. Tips: Add a bit of boiling water to help with the mixing.
Shape and bake
8. Using a spoon, scoop up a heaping amount of batter and shape it into rounds with your hands.
9. Place these onto the prepared baking sheet. Repeat until you’ve used up all the batter (usually makes around 8-10 biscuits).
10. Pop the tray into the preheated oven and bake for about 10 minutes or until they turn a lovely golden colour.
