Start your day with these delicious Banana Protein Pancakes! Light, fluffy, packed with protein and naturally sweet, they’re the perfect way to fuel your morning or enjoy a guilt-free treat. Made with just four simple ingredients, these pancakes are not only quick and easy to whip up but also low in sugar and high in protein. To make them extra special for Valentine’s Day, we used a mini heart-shaped pan from Kmart, but any small pan will do the trick.
Ingredients
2 eggs
2 ripe bananas
¼ cup corn flour
3 scoops Tasteless Whey by Feel Good Protein
Olive oil spray
Optional:
Sugar-free caramel syrup
Fresh blueberries
Fresh blackberries
Method
1. Crack the eggs into a mixing bowl.
2. Add the bananas, corn flour, and Tasteless Whey.
3. Blend with a hand blender until the mixture is smooth, light, and airy.
4. Preheat a pan over low heat and lightly spray with olive oil.
5. Pour the pancake batter into the pan.
6. Flip the pancakes when the edges start to puff up and the centre rises slightly. Don’t wait for bubbles to form, or they may burn.
7. Between batches, run the pan under cold water to prevent it from overheating.
8. Serve immediately with your favourite toppings. We love sugar-free caramel syrup with fresh blueberries and blackberries.
