These Chocolate Chunk Protein Cookies are a simple high-protein snack. Soft, chocolatey and easy to make, they are perfect as a quick protein snack with tea or coffee.
Ingredients
100g almond flour
2 scoops Tasteless Protein Collagen by Feel Good Protein
1 scoop Whey Protein by Feel Good Protein (Vanilla Ice Cream)
40g granulated allulose
1 tsp baking powder
Pinch salt
1 egg
40g butter, melted
1 tsp vanilla extract
1–2 tbsp almond milk
45g Well Naturally Milk Chocolate, chopped into chunks
Method
- Preheat oven to 170°C and line a baking tray with baking paper.
- Chop Well Naturally Milk Chocolate into chunks.
- Add almond flour, Tasteless Protein, Vanilla Whey Protein, granulated allulose, baking powder and salt to a bowl and mix well to combine.
- Add egg, melted butter and vanilla extract and mix until a thick dough forms.
- Add almond milk if needed to bring the mixture together into a soft dough.
- Fold through the chopped chocolate, reserving enough to add some to the top of each cookie.
- Divide the mixture into 10 portions and roll into balls. Place onto the prepared tray and place a piece of the reserved chocolate onto each cookie.
- Bake for 10–12 minutes or until lightly golden.
- Allow cookies to cool before eating, as they will firm up as they set. Enjoy your Chocolate Chunk Protein Cookies!
