Christmas Gingerbread Protein Cookies

Indulge in the festive spirit with our Christmas Gingerbread Protein Cookies! They are a nutritious and delicious festive snack or sweet treat. They’re packed with protein, low in carbs, and taste just like the classic gingerbread cookie.

Ingredients

For the cookies:
2 cups almond flour
3 scoops Tasteless Protein by Feel Good Protein
1 tsp baking powder
1/2 cup brown sugar substitute
1 tsp powdered ginger
1 tsp cinnamon
1 tsp nutmeg
1 large egg
1/4 cup softened butter
1 tsp vanilla extract

For the royal icing (optional):
1 large egg white
1/2 tsp lemon juice
1 1/2 cups sugar-free icing mixture

Method

1. In a large bowl, combine the almond flour, Tasteless Protein by Feel Good Protein, baking powder, brown sugar substitute, and spices (ginger, cinnamon, and nutmeg). Stir well to blend all the dry ingredients.

2. In a separate bowl, whisk together the egg, softened butter, and vanilla extract until smooth and fully combined. Slowly fold the wet mixture into the dry ingredients. Then, gently knead the dough by hand until it forms a smooth dough.

3. Wrap the dough in plastic wrap, press it down gently, and refrigerate for at least 45 minutes to firm it up.

4. Preheat the oven to 180°C. Line a baking sheet with baking paper and set it aside.

5. Lay out a large sheet of baking paper on a clean surface. Unwrap the dough and place it on the paper, then top with another sheet of baking paper. Using a rolling pin, roll the dough out to about 1 cm thick.

6. Use a gingerbread man cookie cutter (or any shape you like) to cut out your cookies, and carefully place them on the prepared baking sheet.

7. Bake for 12-15 minutes, or until the edges are just starting to turn golden. Let the cookies cool completely before decorating.


For the royal icing:

1. In a bowl, whisk together the egg white and lemon juice until frothy.

2. Gradually add in the sugar-free icing mixture, folding it in until the icing reaches a piping consistency. If it’s too runny, add a bit more icing mixture to thicken it up.

3. Once your cookies are completely cool, pipe or spread the royal icing over them for a festive, decorative touch. Christmas Gingerbread Protein Cookies!
