Ingredients
For the dough:
2 tbsp almond flour
1 tbsp coconut flour
1 scoop Tasteless Protein by Feel Good Protein
½ tsp baking powder
1 tbsp melted butter
1 tbsp unsweetened almond milk
½ tsp vanilla extract
1 tbsp powdered sweetener
1 egg yolk
For the cinnamon filling:
½ tbsp melted butter
½ tsp cinnamon
½ tbsp granulated sweetener (erythritol or monk fruit)
For the glaze (optional):
1 tbsp cream cheese, softened
½ tbsp Greek yoghurt (or coconut yoghurt)
½ tbsp powdered sweetener
Splash of vanilla extract
Method
- In a small bowl, mix almond flour, coconut flour, Tasteless Protein by Feel Good Protein, and baking powder. Add melted butter, almond milk, vanilla extract, and egg yolk. Stir until a soft dough forms.
- In a separate bowl, mix melted butter, cinnamon, and sweetener.
- Flatten the dough on a piece of baking paper or a lightly greased surface. Spread the cinnamon filling over it. Roll the dough into a scroll and place it in a microwave-safe mug.
- Microwave on high for 60 seconds (depending on your microwave). The scroll should be firm but not overcooked.
- Mix cream cheese, Greek yoghurt, sweetener, and vanilla extract. Drizzle over the warm cinnamon scroll.
