Ingredients
2 cups rice puffs
3 scoops Whey Protein by Feel Good Protein (Eggnog)
¼ cup Truvia icing
½ cup sugar-free maple syrup
⅓ cup coconut oil
60g white Noshu choc chips, melted
Method
- Line a mini muffin tray with paper cases.
- In a microwave-safe bowl, melt the coconut oil, sugar-free maple syrup, and white Noshu choc chips together until smooth.
- In a separate bowl, stir together the whey protein, rice puffs and Truvia icing until well combined.
- Fold through the melted mixture.
- Spoon mixture into the prepared mini muffin cases and gently press down.
- Pop in the fridge for 1–2 hours, or until completely set.
- Peel off the cases and enjoy your Mini Protein Eggnog Crackles!
