These Mini Rhubarb & Apple Crumbles have a sweet and tangy stewed fruit base topped with a buttery, vanilla crumble – and yes, it’s packed with protein. Made without oats, so it’s lower in carbs and gentler on digestion, while still delivering that warm, nostalgic dessert feel. Perfect for a cosy night in or a delicious after-dinner treat.

Ingredients

2 stalks rhubarb, chopped
2 small green apples diced
1 tbsp lemon juice
1 tbsp sugar-free maple syrup or sweetener
¼ tsp cinnamon
¼ tsp salt
100ml water
½ cup almond meal
2 scoops Whey Protein by Feel Good Protein (Vanilla Ice Cream)
2 tbsp melted butter or coconut oil
1 tbsp maple syrup or sweetener
¼ tsp cinnamon
Pinch of salt

Method

  1. Preheat oven to 180°C fan-forced.
  2. In a small pot, combine rhubarb, apple, lemon juice, cinnamon, sweetener and water.
  3. Simmer over low heat for 10–12 minutes until softened but still holding shape. Spoon into ramekins.
  4. In a bowl, mix almond meal, whey protein powder, cinnamon and salt.
  5. Stir in melted butter and maple syrup until you get a slightly crumbly texture.
  6. Spoon the crumble mix over the fruit and lightly press down.
  7. Bake for 15–18 minutes or until golden and bubbling.
  8. Serve your Mini Rhubarb & Apple Crumbles! Tastes amazing on its own or topped with yoghurt or sugar-free custard.
