One Pan Creamy Ricotta Chicken

Ingredients

  • 3 scoops Tasteless Protein Collagen by Feel Good Protein 
  • 600g chicken tenderloins  
  • 2 tbsp peanut oil 
  • 1/3 cup light smooth ricotta 
  • 1/3 cup high protein Greek yoghurt 
  • 1 red onion  
  • 2 cups baby spinach  
  • 1 tsp dried dill 
  • 1 tbsp Lemon Pepper Spice Blend by Master Foods 

Method

  1. Finely dice the red onion. 
  2. Heat a fry pan over medium heat with a small amount of peanut oil. Add the onion and sauté gently. Pour in ⅓ cup of water and allow the onion to simmer until softened. 
  3. Add the chicken to the pan and sear on all sides until lightly browned. 
  4. Sprinkle lemon pepper spice over the chicken and stir. 
  5. Add the spinach to the pan, then sprinkle over the dried dill, tasteless protein powder, and ⅓ cup of water. Stir until the spinach wilts. 
  6. Stir in the ricotta and Greek yoghurt. Cook gently, stirring, until the sauce has thickened and reduced slightly. 
  7. Divide into meal prep containers and serve with your choice of sides.
