Orange Meringue Mini Pies in a taco boat! These are just the perfect compact size, orangey and delicious without the meringue, but so perfect with it. We love that there is no pastry making involved!
Ingredients
¾ cup caster sugar substitute (Truvia)
1/2 cup cornflour
6 Scoops Tasteless Protein by Feel Good Protein
¼ teaspoon salt
1 cup orange juice
1/3 cup lemon juice
¼ cup water
1 teaspoon vanilla (Optional)
4 eggs, separated
4 tablespoons butter or margarine, cut into pieces
2 teaspoons grated orange zest
½ cup caster sugar substitute (Truvia)
¼ teaspoon cream of tartar
Method
In a saucepan, combine the Tasteless Protein, ¾ of a cup of sugar substitute, cornflour and salt.
Mix in the orange juice, lemon juice, and the water and cook until the mixture thickens and is bubbly.
Remove from the heat and add egg yolks one at a time while whisking vigorously.
Stir in butter and orange zest and combine everything by mixing well with a spoon and pour mixture into a jug suitable for pouring from.
Pour mixture into your mini taco boats and set aside and allow to cool to room temperature.
Preheat the oven to 180 degrees C once your little pies are cooled.
PREPARE THE MERINGUE
In a large glass bowl, add 1/2 cup of Truvia Caster sugar Substitute and the cream of tartar into the bowl with the Caster Sugar and cream of tartar.
Add the 4 egg whites and mix with an electric mixer. Mix until stiff peaks form.
Spread your fluffy meringue over the taco boat orange pies and use a fork to make little peaks.
Bake in preheated oven until meringue topping is at your desired level of delicious golden brown, about 12-15 minutes.
Remove from the oven and enjoy these delightful little morsels!
