Ingredients
375g light smooth ricotta
1 cup of drained pineapple pieces
1tbsp sugar substitute
2 scoops Pineapple Protein Water by Feel Good Protein
1 scoop Tasteless Protein by Feel Good Protein
1tbsp vanilla essence
1 egg
8 sheets of filo pastry
Cooking spray
Optional Toppings
Chopped pistachios
Sugar-free caramel syrup
Dark muscovado sugar
Method
- Preheat oven to 180 degrees.
- Line a baking tray with baking paper.
- Into a bowl add ricotta, pineapple pieces, Pineapple Protein Water by Feel Good Protein, Tasteless Protein by Feel Good Protein, egg and vanilla essence. Stir well to combine.
- Unroll 3 sheets of filo pastry. Lightly spray each sheet with cooking spray.
- Cut the sheets into four equal pieces and place 2 tbsp of filling in each. Spray again with cooking spray.
- Fold each piece into a parcel and then wrap an additional piece of filo around the parcel to ensure the filling stays inside.
- Repeat this process until all the filling is used up. Spray the parcels again with cooking spray and sprinkle with muscovado sugar.
- Bake the parcels in the oven for 20 – 25 minutes or until golden and crispy.
- Drizzle with caramel syrup and chopped pistachios and serve! Enjoy your Pineapple Protein Parcels.
