Ingredients
2 pears
1 cup dark cherry juice
1/3 cup sugar-free maple syrup
125g light cream cheese
1/3 cup light mascarpone
1 scoop Feel Good Protein Whey Protein – Vanilla Ice Cream
Method
- Preheat oven to 180°C.
- Cut the pears in half and remove the cores.
- In a small ovenproof dish, mix the cherry juice and sugar-free maple syrup until well combined.
- Place the pears face-down in the juice mixture and bake for 20 minutes.
- While the pears are baking, combine the cream cheese, mascarpone, and Feel Good Protein Whey Protein – Vanilla Ice Cream in a bowl. Mix until smooth, then transfer to a piping bag.
- Once the pears are tender, plate them up and pipe or spoon the cheesecake mixture into the hollowed centres.
- Drizzle the reserved cherry syrup over the top for extra flavour.
