Vanilla Protein Marshmallows

These Vanilla Protein Marshmallows are light, fluffy, and perfectly sweet – made for dunking into your hot choccy, enjoying as a post-workout treat, or sneaking straight from the fridge (no judgement here). They taste like a treat but come with a nourishing protein boost, so you can satisfy your sweet tooth and fuel your body at the same time.

Ingredients

6 tbsp powdered gelatin
240ml cold water
240ml hot water
2 scoops Whey Protein by Feel Good Protein (Vanilla Ice Cream)
4 tbsp powdered erythritol or agave syrup
2 tsp vanilla extract
Pinch of salt

Method

  1. Sprinkle the gelatin over cold water and let it sit for 5 minutes until fully soaked.
  2. Pour hot water over the bloomed gelatin and stir until completely dissolved and lump-free.
  3. Let the mixture rest for 2–3 minutes, so it’s warm but not hot.
  4. Slowly sprinkle in the whey protein while gently whisking until smooth.
  5. Stir in sweetener, vanilla, and a pinch of salt.
  6. Using a hand or stand mixer, whip on high for 6–8 minutes until thick, glossy, and holding firm peaks.
  7. Spoon or pipe the mixture into a lined tray or silicone mould.
  8. Refrigerate for 1–2 hours until fully set.
  9. Cut into cubes and lightly dust with powdered sweetener. Enjoy your Vanilla Protein Marshmallows!
