Blueberry French Toast Protein Cups

Ingredients

  • 2 scoops Tasteless Protein Collagen by Feel Good Protein 
  • 4 slices Alpine Lower Carb Wholemeal Bread 
  • 120g light cream cheese 
  • 20g Baking Allulose Granules by SaweetWay 
  • 40g blueberries 
  • 2 tbsp sugar free maple flavoured syrup 
  • 4 eggs 
  • ¼ tsp cinnamon 
  • ½ cup unsweetened almond milk 
  • 1 tsp vanilla extract 
  • Non-stick cooking spray

Method

  1. Preheat oven to 170°C (fan-forced). 
  2. In a small bowl, combine the cream cheese, allulose, protein powder, and cinnamon. Mix with a spoon until smooth and fully combined. 
  3. Place the first slice of bread on a chopping board and spread ¼ of the cream cheese mixture over it. Add the second slice on top and spread another ¼ of the mixture and repeat with the third and fourth slices, spreading the remaining mixture on each layer and on the top slice. 
  4. Using a sharp knife, cut the stacked bread into 4 equal pieces, slicing through all layers. Set the pieces aside. 
  5. In a jug, whisk together the almond milk, eggs, maple‑flavoured syrup, and vanilla extract until smooth. 
  6. Place four ramekins on a baking tray and lightly spray the inside of each ramekin with non‑stick cooking spray. 
  7. Place one quarter of the bread stack into each ramekin, breaking it into smaller chunks if needed.  
  8. Add blueberries to each ramekin, tucking them gently between the bread pieces.   
  9. Pour the egg mixture evenly over the bread and blueberries in each ramekin. 
  10. Bake in the oven for 20 minutes until golden brown. 
  11. Remove from the oven and enjoy your Blueberry Fresh Toast Protein Cups!
