This High Protein Anzac Slice is ridiculously easy to make, tastes incredible, and keeps you sorted all week long for hitting your protein goals without feeling like you’re missing out. Pop it in the fridge, and you’ve got the perfect grab-and-go bite for breakfast, a post-workout snack, or even a little after-dinner sweet treat when you’re feeling peckish.
Ingredients
2 cups rolled oats
¾ cup almond flour
1 cup monkfruit sweetener
¾ cup desiccated coconut
½ cup butter
3 tbsp sugar-free maple syrup
2 tbsp peanut butter
3 scoops Tasteless Protein Collagen by Feel Good Protein
½ tsp bicarb soda
Method
- Preheat oven to 170°C fan. Line a baking tin with baking paper.
- In a large bowl, mix the rolled oats, almond flour, sweetener, desiccated coconut and tasteless protein.
- In a saucepan over medium heat, melt the butter, peanut butter and maple syrup, stirring continuously for 2–3 minutes.
- Remove from the heat and stir through the bicarb soda.
- Pour the wet mixture into the dry ingredients and mix until well combined.
- Press the mixture firmly into the prepared tin.
- Bake for 23–25 minutes until golden.
- Allow to cool in the tin for 15 minutes, then transfer to a wire rack to cool completely.
- Cut into 10 slices. Enjoy your High Protein Anzac Slice!
