If you’ve ever tried Weetbix Slice, then you’ll just love this recipe! 😍 This Lemon Weetbix Slice with Lime Icing, is a lower carb and high protein option for lunch boxes, or just because you want slice! This one is a must try.
Ingredients
Base
4 Weetbix (we used gluten free)
1 3/4 cup Almond flour
2 Teaspoon Baking Powder
¾ cup Monk Fruit Sweetener
4 Scoops Tasteless Protein by Feel Good Protein
½ cup lemon juice
100 grams of melted butter
Icing
250 grams lite Cream Cheese
2 scoops Tasteless Protein by Feel Good Protein
½ cup Truvia Icing
1 tablespoon of Lime Juice
Method
Pre-heat oven to 180 degrees.
Add the Weetbix to a large bowl and crumble slightly.
Pour lemon juice over the top of the Weetbix.
Add Almond flour, Tasteless Protein, Baking Powder, Coconut and Monk Fruit Sweetener and mix thoroughly to combine.
Pour butter over the top of the mixture and thoroughly mix everything together again.
Place mixture into a lined slice pan and press down.
Bake for 15 minutes or until just golden on top
Remove from oven and allow to cool.
Using an electric mixer combine all of the icing ingredients, including Tasteless Protein, and pour over your cooled slice base and spread it until evenly distributed.
Top with fresh passionfruit pulp (if desired) and enjoy!
