Ingredients
1 cup almond flour
4 Scoops of Tasteless Protein by Feel Good Protein
1/4 cup coconut flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 eggs
1/4 cup honey or maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1 medium apple, peeled and diced
1/2 cup fresh raspberries
Method
1. Preheat your oven to 175°C and line a muffin tin with paper liners.
2. In a large mixing bowl, combine the almond flour, Tasteless Protein, coconut flour, baking powder, baking soda, salt and cinnamon. Mix well.
3. In a separate bowl, whisk together the eggs, honey or maple syrup, melted coconut oil, and vanilla extract until well combined.
4. Next, pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
5. Gently fold in the diced apple and fresh raspberries. Careful not to over-mix.
6. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
7. Bake in the preheated oven for 20-25 minutes. (Or until a toothpick inserted into the centre of a muffin comes out clean).
8. Remove from the oven and allow the Apple Raspberry Protein Muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
