Ingredients
Canola oil spray
1 cup self-raising flour
½ teaspoon garlic powder
1 teaspoon dried parsley flakes
3 scoops Tasteless Protein by Feel Good Protein
¼ cup fresh dill, finely chopped
½ cup baby spinach, finely chopped
3 slices of bacon, finely diced
4 large eggs
¼ cup milk of your choice (we use almond milk)
2 tablespoons olive oil
2 teaspoons Pimp My Salad Hemp Parm Cheez
½ cup grated mozzarella
Method
1. Preheat your oven to 170°C (fan-forced). Lightly spray a muffin pan with your preferred non-stick cooking spray or grease it with a small amount of olive oil.
2. In a large mixing bowl, combine the self-raising flour, garlic powder, parsley flakes, and protein powder. Stir until evenly blended.
3. Finely dice the bacon and chop the baby spinach and dill. Add these to the dry ingredients, mixing well to distribute them evenly throughout the mixture.
4. In a separate bowl, crack the eggs and whisk until well combined. Pour the eggs into the dry mixture, along with the milk and olive oil. Stir everything together until a smooth batter forms, being careful not to overmix.
5. Divide the batter evenly between the muffin cups, filling each about three-quarters full.
6. Sprinkle a pinch of Hemp Parm Cheez and grated mozzarella on top of each muffin for a deliciously cheesy finish.
7. Place the muffin pan in the oven and bake for 18–20 minutes, or until the muffins are golden brown and a skewer inserted into the centre comes out clean.
8. Remove the muffins from the oven and allow them to cool slightly before transferring them to a wire rack. Serve warm or store in an airtight container for up to three days.
