Make dinner special with these delicious and healthy Chicken Enchiladas with Cheese Protein Sauce! We’ve taken the classic recipe and made it even better, using our Tasteless Protein by Feel Good Protein to boost its nutritional value. Perfect for family meals or casual gatherings, these enchiladas are a satisfying and yummy meal.
Ingredients
500g of chicken steaks (marinated)
2 tins of Carnation Light and Creamy evaporated milk
4 scoops Tasteless Protein by Feel Good Protein
½ cup nutritional yeast
1 cup grated cheddar cheese
1 tbsp Mingle Zesty Lime Umami Seasoning
1 tsp cornflour & enough water to dissolve it
1 cup dry coleslaw mix

Method
1. Preheat the oven to 180°C.
2. Lightly spray a small baking dish with non-stick cooking spray.
3. Cook the chicken in a pan until thoroughly cooked.
4. In a separate saucepan, gently heat the Carnation milk.
5. Add the Tasteless Protein by Feel Good Protein, grated cheddar cheese and nutritional yeast to the saucepan, stirring until the cheese melts and the sauce thickens.
6. If desired, stir in the Mingle Umami Seasoning for an extra flavour boost.
7. To ensure the sauce reaches the perfect consistency, dissolve a tsp of cornflour in water, add to the sauce, and bring it to a gentle boil before removing from heat.
8. Once the chicken is cooked, shred it directly in the pan.
9. Mix the shredded chicken with the dry coleslaw mix and half of the protein cheese sauce mixture.
10. Fill each Simsons Pantry Wrap with the chicken mixture, roll them up, and place them seam-side down in the prepared baking dish.
11. For the topping, pour the remaining cheese sauce over the enchiladas and sprinkle a little extra cheese on top.
12. Bake in the oven for 15 minutes or until the cheese is golden brown and bubbling.
13. Serve hot with a fresh salad and enjoy a meal that’s as comforting as it is nutritious!
