This Crustless High-Protein Quiche Lorraine is perfect for breakfast, lunch, or a light dinner. It’s packed with protein from eggs, cottage cheese, and a boost of Tasteless Protein, making it low in carbs and completely gluten-free. Ingredients
4 large eggs
1/2 cup cottage cheese
1/2 cup low-fat cheese
3 scoops Tasteless Protein by Feel Good Protein
1/2 cup diced shortcut bacon
1/2 cup finely chopped brown onion
1/4 cup reduced-fat milk or unsweetened almond milk
1 tsp Dijon mustard
Salt and pepper, to taste
Spray olive oil
Fresh chives or parsley, to garnish (optional)
Method
- Preheat oven to 180°C. Lightly spray a small dish or four ramekins with olive oil.
- Cook the bacon and onion in a non-stick pan over medium heat until the onion is soft and the bacon is golden. Set aside.
- In a mixing bowl, whisk the eggs, milk, cottage cheese, Dijon mustard, and Tasteless Protein until smooth.
- Stir in the grated cheese, cooked bacon and onion, and season with a pinch of salt and pepper.
- Pour the mixture into the greased dish or ramekins and bake for 30–35 minutes.
