Egg Protein Bowl

Sometimes the simplest meals are the best! This egg protein bowl isn’t fancy, but it’s packed with flavour, balance, and everything your post-bariatric body needs to thrive. It’s quick, customisable, and it reminds you that nourishing your body doesn’t have to be complicated.

Ingredients

1 egg
1 egg white
1 scoop Tasteless Protein by Feel Good Protein
1 tbsp cottage cheese or ricotta
2 tbsp diced capsicum
1 tbsp finely chopped red onion or spring onion
1/3 of a chopped medium tomato
1 tbsp finely chopped baby spinach
1 tbsp grated tasty cheese or a sprinkle of parmesan
Salt & pepper to taste

Method

  1. In a bowl, whisk the egg, egg white, and Tasteless Protein with a pinch of salt and whisk until smooth. Let it sit for 1 minute to help the protein dissolve.
  2. Spray a non-stick pan with olive oil spray and warm it over medium heat.
  3. Add the capsicum, tomato and spring onion to the pan and sauté for 1–2 minutes until soft.
  4. Add the spinach and stir until just wilted.
  5. Pour in the egg mixture and stir gently as it cooks.
  6. When the eggs are nearly set, fold in the cottage cheese and grated cheese. Let it melt through and turn creamy.
  7. Spoon into your favourite bowl. Add your optional toppings, including herbs or spices, avocado, hot sauce, etc.
