Sometimes the simplest meals are the best! This egg protein bowl isn’t fancy, but it’s packed with flavour, balance, and everything your post-bariatric body needs to thrive. It’s quick, customisable, and it reminds you that nourishing your body doesn’t have to be complicated.
Ingredients
1 egg
1 egg white
1 scoop Tasteless Protein by Feel Good Protein
1 tbsp cottage cheese or ricotta
2 tbsp diced capsicum
1 tbsp finely chopped red onion or spring onion
1/3 of a chopped medium tomato
1 tbsp finely chopped baby spinach
1 tbsp grated tasty cheese or a sprinkle of parmesan
Salt & pepper to taste
Method
- In a bowl, whisk the egg, egg white, and Tasteless Protein with a pinch of salt and whisk until smooth. Let it sit for 1 minute to help the protein dissolve.
- Spray a non-stick pan with olive oil spray and warm it over medium heat.
- Add the capsicum, tomato and spring onion to the pan and sauté for 1–2 minutes until soft.
- Add the spinach and stir until just wilted.
- Pour in the egg mixture and stir gently as it cooks.
- When the eggs are nearly set, fold in the cottage cheese and grated cheese. Let it melt through and turn creamy.
- Spoon into your favourite bowl. Add your optional toppings, including herbs or spices, avocado, hot sauce, etc.
