Ingredients
Muffins
- 1 pack Noshu Low Carb All Purpose Vanilla Baking Mix 360g
- ½ cup Sugar Free Chocolate Chips by Get Ya Yum On
- 4 scoops Tasteless Protein Collagen by Feel Good Protein
- 2 eggs
- ½ cup milk
- ¼ cup Greek yoghurt
- 1 tbsp unsweetened cocoa powder
- 4 tbsp butter, softened
High-Protein Caramel Sauce
- 5 Medjool dates
- 100 ml hot water
- 1 scoop Tasteless Protein Collagen by Feel Good Protein
- ¼ cup almond milk

Method
- Preheat the oven to 170°C (fan-forced) and line a muffin tray with paper liners.
- Place the dates in a small heatproof bowl, cover with boiling water, and set aside to soak.
- In a large mixing bowl, combine the all-purpose baking mix, eggs, milk, yoghurt, and butter. Use a hand mixer to mix until smooth and well combined.
- Add 4 scoops of protein powder and mix again until fully incorporated.
- Divide the batter evenly between two bowls.
- To one bowl, add the cocoa powder and chocolate chips, mixing well to create the double-chocolate batter.
- Spoon a layer of vanilla batter into each muffin liner, followed by a layer of chocolate batter, then finish with another layer of vanilla batter to create a swirl effect.
- Bake for 18–20 minutes, or until the muffins are just set and lightly golden.
- Allow the muffins to cool slightly in the tray before transferring them to a wire rack to cool completely.
- While the muffins are cooling, add the soaked dates along with their soaking liquid, the tasteless protein powder, and almond milk to a blender.
- Blend until completely smooth and pourable, scraping down the sides if needed.
- Lightly drizzle the protein sauce over your muffins and enjoy your Double Choc Muffins!
