Method

  1. Preheat the oven to 170°C (fan-forced) and line a muffin tray with paper liners. 
  1. Place the dates in a small heatproof bowl, cover with boiling water, and set aside to soak. 
  1. In a large mixing bowl, combine the all-purpose baking mix, eggs, milk, yoghurt, and butter. Use a hand mixer to mix until smooth and well combined. 
  1. Add 4 scoops of protein powder and mix again until fully incorporated. 
  1. Divide the batter evenly between two bowls. 
  1. To one bowl, add the cocoa powder and chocolate chips, mixing well to create the double-chocolate batter. 
  1. Spoon a layer of vanilla batter into each muffin liner, followed by a layer of chocolate batter, then finish with another layer of vanilla batter to create a swirl effect. 
  1. Bake for 18–20 minutes, or until the muffins are just set and lightly golden. 
  1. Allow the muffins to cool slightly in the tray before transferring them to a wire rack to cool completely. 
  1. While the muffins are cooling, add the soaked dates along with their soaking liquid, the tasteless protein powder, and almond milk to a blender. 
  1. Blend until completely smooth and pourable, scraping down the sides if needed. 
  1. Lightly drizzle the protein sauce over your muffins and enjoy your Double Choc Muffins!
