Get the family excited about Easter with this Low Carb Easter Fudge. Packed with lots of flavour and protein, this keto-friendly fudge is a delightful way to celebrate Easter while still staying on track with your daily macro goals. And the best part? It’s super easy to make – anyone can make it!

Ingredients

1/2 cup cashew butter
1/4 cup coconut oil
1/4 cup unsweetened cocoa powder
4 Scoops Tasteless Whey by Feel Good Protein
2 tablespoons of your choice of sugar substitute (we used Truvia for Baking Caster)
1 teaspoon vanilla extract
Pinch of salt

Optional:
Chopped nuts
Sugar-free chocolate chips
Easter decorations

Method

1. In a small saucepan, melt the cashew butter and coconut oil over low heat. Stir constantly until smooth.

2. Remove from heat and put into a large bowl.

3. Stir in the cocoa powder, protein powder, sugar substitute, vanilla extract and salt until they are well combined.

4. Pour the mixture into a lined baking dish or silicone mould. Spread it out evenly.

5. Optional: Sprinkle chopped nuts or sugar-free chocolate chips on top of the fudge.

6. Place the fudge in the refrigerator to set for at least 1-2 hours, or until firm.

7. Once set, cut the fudge into small squares (or whatever size you desire) and store in an airtight container inside the refrigerator. Enjoy your delicious Low Carb Easter Fudge!
