These high protein Peanut Butter Chocolate Protein Cookies are made with simple ingredients and are quick to make! They’re soft, chewy, delicious—and won’t eat up your daily calorie count if you decide to have more than one!
Ingredients
1/2 cup peanut butter or nut butter of choice
1/4 cup Light Brown Sugar
1/2 teaspoon salt
1 large egg
1/2 teaspoon pure vanilla extract
1/2 teaspoon baking soda
3 Scoops Tasteless Protein by Feel Good Protein
3 tablespoons Red Tractor Paleo Flour
3 tablespoons Noshu chocolate chips
Method
Preheat your oven to 180 C and make sure that your baking tray is lined with non-stick baking paper!
In a large bowl go ahead and combine your Peanut butter, brown sugar , vanilla, salt and egg mixing until everything is beautifully combined.
Add baking soda and mix.
Work in the almond flour and protein powder at this point and keep mixing even if the mixture seems a little dry – give it time to combine properly.
Add in the choc chips and work them through your cookie dough!
If you determine that your mixture is a little bit too dry then now is the time to add a little splash of your favourite milk and mix until the dough is to your liking.
Using a small scoop or a soup spoon make balls with the dough and place them onto your cookie tray. This mixture should make between 12 and 14 delicious cookies.
Bake in the oven for 6 minutes – you will know that they are ready when the edges are just golden!
Allow the cookies to cool for 3-5 minutes on the tray before transferring them to a cooling rack. And enjoy!!
