Protein-Packed Sweet Potato Hash Browns

What’s better than a crispy hash brown to start your day? An easy, protein-packed, delicious alternative that’s perfect for meal prep!

These protein-packed sweet potato hash browns are golden on the outside, fluffy on the inside, and packed with over 18 grams of protein per serve.

Plate them up any hour of the day topped with sliced beef, a poached egg, smashed avocado, or even a dollop of Greek yoghurt and chives for a meal that will hit all your macro goals!

Ingredients

  • 4 scoops Tasteless Protein Collagen by Feel Good Protein 
  • 1 ½ cups grated sweet potato 
  • ½ cup all-purpose flour (use gluten-free if needed) 
  • ½ tsp salt 
  • 1 tsp dried parsley flakes 
  • ½ tsp garlic powder 
  • 2 eggs 
  • ½ cup grated parmesan cheese 

Method

  1. Preheat oven to 180°C (fan forced). 
  2. Grate the sweet potato and place it into a bowl of cold water for 30 minutes to remove excess starch for a crispy finish. 
  3. Drain the sweet potato using a clean cloth, squeezing out all the excess liquid. 
  4. To a bowl, add the sweet potato, tasteless protein powder, flour, salt, parsley flakes, garlic powder, parmesan cheese, and 1 egg. Mix well until the dry ingredients are dissolved. 
  5. Add the final egg to the batch and mix well. 
  6. Heat a non-stick pan over medium heat and spray with oil (or use an oil with a high smoke point). 
  7. Spoon the mixture into the pan and flatten gently. 
  8. Allow to brown lightly, then flip and cook the other side until golden. 
  9. Transfer to a baking tray lined with non-stick baking paper and bake for 10 minutes at 180°C (fan forced). 
  10. Remove from the oven, add your favourite toppings. Enjoy your Protein-Packed Sweet Potato Hash Browns!
