These Pumpkin, Feta and Herb muffins are perfect for those cold winter days or for when you just feel like a savoury snack that hits the spot. These muffins are absolutely divine!
Ingredients
2 Cups Flour (we used Red Tractor Paleo Flour)
4 teaspoons baking powder
3 scoops of Tasteless Protein Powder by Feel Good Protein
1 cup cooked roasted pumpkin cubed
½ cup Feta crumbled
½ cup mixed herbs finely chopped
3 eggs
1 teaspoon garlic salt
1 clove roasted garlic
1 teaspoon cinnamon
2 teaspoons Italian herbs
80 grams butter
½ cup milk
Method
Set your oven to 180 degrees Celcius.
Peel, cube and then roast 1 cup of pumpkin until the pumpkin is just softened, along with a clove of garlic.
In a large bowl combine the flour, baking powder, Tasteless Protein, Salt and Italian herbs, and mix these together.
In a separate bowl or jug mix together the milk and butter (melted) until these two ingredients are well combined.
Add the eggs into the dry ingredients and combine until you have a thick muffin batter.
Stir through the mixture the pumpkin, roasted garlic, feta and herbs.
Add the milk and butter to the batter and mix well.
Spoon the mixture into muffin pans.
Bake in your pre-heated oven for 25 minutes or until golden and cooked through!
Enjoy these plain or with some of your favourite butter.
