Tender beef and velvety, creamy mushroom sauce which you can prepare in a flash – perfect for those busy week days/nights when hunger strikes and you need something tasty, packed with protein and nutritious ASAP. Ingredients
¼ cup cornflour
½ a large onion, chopped
Thyme and Coriander (to serve)
250g button mushrooms, thinly sliced
4 scoops Tasteless Protein by Feel Good Protein
2 cups beef stock
150ml light sour cream
½ cup tomato paste
1 tsp Dijon Mustard
500g beef stir-fry strips
Olive oil spray
1 tsp salt (to taste)
1 tsp pepper
Apple Cider Vinegar
Serve with Zucchini, traditional pasta or egg noodles and Spring Onion if desired! This recipe is also wonderful with all of the differed mash types!
Method
For faster result, we used pre-cut beef strips and pre-cut mushrooms!
First thing, lightly marinade beef in some apple cider vinegar while finely slicing the onions.
Then, spray pan well with olive oil.
Lightly sear beef for 30 seconds per side in two batches.
Remove from pan as soon as searing has taken place and set to the side.
Without cleaning the pan, add in your onions and lightly sauté for a few minutes.
Next, deglaze pan with half a cup of beef stock and then add in the mushrooms. Allow the mushrooms to cook down for a minute or two.
Add Tasteless Protein by Feel Good Protein into one cup of the beef broth and add to pan. Add in your tomato paste and the Dijon Mustard.
Then, add in the rest of the beef stock to the pan.
Pour cornflour over the mixture and mix.
Add in the light sour cream and mix.
Then, return beef and the juices back to the pan and simmer for a few minutes.
Season as desired with salt and pepper.
Finally, top with herbs and serve the Quick Beef Stroganoff immediately onto a bed of mash, pasta, or noodles and enjoy!
*To Puree, blend one cup of the Beef Stroganoff with 1/3 cup beef stock until beautifully smooth and combined.
