Made with Tasteless Protein by Feel Good Protein, cottage cheese, bacon, veggies, and creamy feta, it’s packed with goodness and a serious protein boost. Gluten-free and meal-prep friendly, it’s perfect for breakfast, post-workout, or a quick lunch on the go.
Ingredients
6 large eggs
4 scoops Tasteless Protein by Feel Good Protein
1 cup cottage cheese
Salt and pepper to taste
1 tsp Chicken Gravy by Mingle
150g cubed pumpkin
1 cup baby spinach, finely sliced
1 handful of basil, finely sliced
1 cup cherry tomatoes, finely diced
175g bacon, finely diced
100g feta
Method
- Preheat the oven to 160°C (fan-forced).
- In a large mixing bowl, whisk together eggs, cottage cheese, Tasteless Protein by Feel Good Protein, salt, pepper, and Mingle seasoning until smooth and well combined. Set aside.
- Finely dice the bacon, cherry tomatoes, basil, and baby spinach. If your pumpkin isn’t pre-chopped, cut it into small cubes.
- Grease a baking dish with cooking spray. Evenly spread the bacon, veggies, and pumpkin across the base of the dish.
- Pour the egg mixture over the top, ensuring everything is evenly coated. Crumble the feta over the top.
- Bake for 40 minutes, or until the quiche is set.
- Remove from the oven, let it cool slightly, then slice and enjoy your Rainbow Protein Quiche!
