These guilt-free muffins are rich in protein and super low in carbs so you can enjoy every mouthful knowing you’re on track to reaching your daily macro goal. The best part is, they taste just as wonderful! Feel free to leave them plain or decorate differently if these are for other occasions.
Ingredients
100 grams Butter
¼ cup Monk Fruit Sweetener
2 Eggs
1 Teaspoon Vanilla Extract
3 Tablespoons Unsweetened Coco Powder
1 Cup Almond Flour
1 ¼ teaspoons Baking Powder
3 Scoops Tasteless Protein For Kids by Feel Good Protein
¼ cup Almond Milk
Icing Mixture & Toppings (If Desired)
½ cup Sugar Free Icing Mixture
1 Tablespoon Unsweetened Coco Powder
12 Candy Eyes
12 Pretzels
6 red Smarties
6 Chocolate Buttons
Hot water
Method
1. First, preheat the oven to 170C and line a muffin pan with 6 full size muffin papers.
2. Cream together the butter and sugar substitute (or sugar if you wish to use sugar).
3. Next, mix in the two eggs until totally combined.
4. Then, add in the vanilla extract and baking powder.
5. Mix in the almond flour, Tasteless Protein For Kids and Coco Powder and then, mix while adding in the milk. By now you should achieve a smooth thick batter.
6. Spoon the batter into the muffin Papers and bake in the oven for between 20-25 minutes depending on your oven.
7. Afterwards, remove from oven and allow to cool.
8. Optional: Ice the muffins when cooled completely and decorate each muffin to create the most adorable Rudolph Choc Keto Muffins!
