Protein Cottage Cheese Pinwheels

Ingredients

2 cups spelt wholemeal flour
1 ½ cups Greek yoghurt
4 scoops Tasteless Protein by Feel Good Protein
1 tsp baking powder
1 cup fresh spinach (or silver beet) chopped and steamed
180g high protein cottage cheese with chives
50g grated cheese
1 tbsp Nutritional Yeast by Pimp My Salad

Method

  1. Preheat oven to 180 degrees.
  2. Add spelt flour, Greek yoghurt, Tasteless Protein by Feel Good Protein, baking powder and natural yeast to a bowl. Mix well to combine until a dough is formed.
  3. Using floured greaseproof paper, roll out the dough using a rolling pin until 2cm thick.
  4. Top the dough with cottage cheese and spread it out evenly.
  5. Top the cottage cheese with the spinach and grated cheese.
  6. Roll the dough into your desired pinwheel shape.
  7. Cut individual pinwheels and place them into a lined baking tin.
  8. Spray the pinwheels with cooking spray and top with grated cheese before baking for 35 minutes.
  9. Once fully cooked, remove from the oven and enjoy your Spinach & Cottage Cheese Protein Pinwheels!
