Spinach & Cottage Cheese Protein Pinwheels are the perfect bite-sized treat that’s both delicious and nutritious. Ingredients
2 cups spelt wholemeal flour
1 ½ cups Greek yoghurt
4 scoops Tasteless Protein by Feel Good Protein
1 tsp baking powder
1 cup fresh spinach (or silver beet) chopped and steamed
180g high protein cottage cheese with chives
50g grated cheese
1 tbsp Nutritional Yeast by Pimp My Salad
Method
- Preheat oven to 180 degrees.
- Add spelt flour, Greek yoghurt, Tasteless Protein by Feel Good Protein, baking powder and natural yeast to a bowl. Mix well to combine until a dough is formed.
- Using floured greaseproof paper, roll out the dough using a rolling pin until 2cm thick.
- Top the dough with cottage cheese and spread it out evenly.
- Top the cottage cheese with the spinach and grated cheese.
- Roll the dough into your desired pinwheel shape.
- Cut individual pinwheels and place them into a lined baking tin.
- Spray the pinwheels with cooking spray and top with grated cheese before baking for 35 minutes.
- Once fully cooked, remove from the oven and enjoy your Spinach & Cottage Cheese Protein Pinwheels!
