Ingredients
3 eggs
1 teaspoon Chicken Spice
1 tablespoon Mingle Low Fodmap Moroccan Spice
3 Scoops of Tasteless Protein by Feel Good Protein
½ Red Onion
½ Zucchini
¼ bunch Parsley
150 g bacon
100 g Mini Bocconcini
1 cup Grated Cheddar
12 Stand ‘N Stuff mini tortilla boats
Method
1. Preheat oven to 180 Degrees.
2. For the egg mixture; Crack the eggs into a bowl and add Mingle Moroccan Spice, Chicken Spice and Tasteless Protein. Mix well.
3. On the side, cut the onion as finely as you can and set it aside.
4. Grate half a zucchini and squeeze it over the sink to remove as much liquid from it as possible – this step creates a better texture for your protein bites. Salt the grated zucchini and leave it out for 10 minutes.
5. Chop the parsley very finely.
6. Add the chopped parsley, grated zucchini and chopped onion into the egg mixture and mix everything.
7. Add diced bacon into the mixture and mix again.
8. Lay out the Mini Stand N Stuff Tortillas on a tray and place a few pieces of bocconcini in each one.
9. Pour the egg mixture into the tortillas.
10. Once the tortillas are filled, top them with cheddar cheese.
11. Bake in the oven for 15 minutes.
12. Remove from the oven and enjoy the Stand And Stuff Protein Bites.
Note: Keep these protein bites in the freezer for up to a month by double-bagging them.
