Our Three Cheese And Chive Mini Quiches make a perfect grab-and-go breakfast or a delightful addition to any brunch spread. Packed with creamy ricotta, savoury grated cheese, feta, spinach and fresh chives, these mini quiches are highly nutritious, low in carbs and full of flavour.
Ingredients
6 eggs
1/2 cup ricotta cheese
1/2 cup grated cheese (such as cheddar or mozzarella)
3 tablespoons chives, chopped
1 sprig of Dill
1/2 cup feta
1 cup finely chopped spinach
3 scoops Tasteless Protein by Feel Good Protein
Salt and pepper to taste

Method
1. Preheat your oven to 180°C and spray a silicone muffin mould with cooking spray.
2. In a mixing bowl, whisk together the eggs, ricotta cheese, feta, grated cheese, chopped spinach, chives, and dill. Then add in Tasteless Protein by Feel Good Protein, salt and pepper until well combined.
3. Evenly distribute the mixture into 6 muffin moulds, filling them almost to the top.
4. Place the filled muffin mould on a baking tray before putting it into the oven.
5. Bake for about 30 minutes or until they are set and golden brown on top. If using a fan-forced oven, adjust the cooking time accordingly.
6. Once baked, remove the muffin mould from the oven and let it cool slightly before carefully removing the mini quiches from the moulds.
7. Serve the Three Cheese And Chive Mini Quiches warm or at room temperature and enjoy the delicious combination of flavours in each bite.
