Ingredients
6 sheets Filo pastry – 120 grams
Canola oil
1 small red onion
6-8 cherry tomatoes
1 cup The Odd Eggs – Ready to Pour Egg Mix
3 scoops Tasteless Protein by Feel Good Protein
1 teaspoon Onion Powder
1 tbsp Mingle Use-Me-On-Everything (previously All Purpose) seasoning
2 ½ slices of short cut bacon
2 small mozzarella balls
½ cup baby spinach
2 eggs
¼ cup parmesan
Method
1. Preheat the oven to 180C.
2. Use four sheets of filo pastry on a lined baking tray to create a heart shape. Use an additional sheet to build up the sides of the heart, then set this aside.
3. Finely slice the red onion and chop the cherry tomatoes in half.
4. In a mixing bowl, combine the Ready to Pour Egg Mix, Tasteless Protein by Feel Good Protein, Mingle Use-Me-On-Everything seasoning, and Onion Powder. Mix until well combined.
5. On the prepared heart-shaped pastry, arrange the short cut bacon, mozzarella balls, sliced onion, cherry tomatoes, and baby spinach in a visually pleasing manner.
6. Pour the egg and protein mixture into the heart-shaped pastry. Crack the two eggs directly on top of the mixture.
7. Sprinkle the top with parmesan cheese.
8. Bake in the oven for 20 minutes or until the pastry is golden and the filling is set.
