Ingredients
2.5 Zucchini’s peeled into ribbons
1 cup Ricotta
1 tsp Everything Eggs Seasoning
1 Egg
1/3 cup Feta
1 tsp Lemon rind
3 Scoops Tasteless Protein by Feel Good Protein
Canola oil
Tomato based pasta sauce
½ cup Mozzarella
Method
1. Preheat your oven to 180 C.
2. Using a vegetable peeler, slice the zucchini into delicate ribbons and set them aside.
3. In a mixing bowl, combine the ricotta, Everything Eggs seasoning, egg, feta, lemon rind and Tasteless Protein. Stir well until well blended and creamy.
4. Lightly grease a square or round cupcake tin to prevent it from sticking.
