These little bites of joy are packed with protein, low in carbs, and are bringing the Easter vibes! Think creamy white chocolate, hints of coconut, and a sneaky carrot cake flavour. Perfect as a protein-packed Easter treat, post-run snack, or just a little something sweet without the guilt. Enjoy these Easter Bunny Protein Balls!

Ingredients

4 scoops Tasteless Whey by Feel Good Protein
½ cup almond meal
¼ cup desiccated coconut (plus extra for rolling)
1 small carrot, finely grated
¼ cup chopped cashews + 1 tbsp for topping
2 tbsp sugar-free maple syrup 
1 tsp vanilla extract
½ tsp cinnamon
1 tbsp melted coconut oil
2 tbsp light cream cheese 
50g sugar-free white chocolate, melted (for dipping, optional)
Optional: Candy bunny ears and Queen’s Choc Flavoured Gold Pearls

Method

  1. In a bowl, mix Tasteless Whey by Feel Good Protein, almond meal, coconut and cinnamon together.
  2. Add in the grated carrot, maple syrup, vanilla and cream cheese. Stir until a dough forms. If too dry, add a splash of milk.
  3. In a separate bowl, melt the white chocolate with the coconut oil. Once fully melted, add the chopped cashews and combine.
  4. Roll the protein balls, adding 1 Queens Choc Flavoured Gold Pearl into the centre.
  5. Dip the protein balls into the chocolate mixture. Optional: Decorate the protein balls with bunny ears.
  6. Pop in the fridge for at least 30 minutes to firm up. Enjoy your Easter Bunny Protein Balls!
