Our Chicken & Cranberry Pinwheel Christmas Tree is guaranteed to be the showstopper on your festive table! Light, high-protein, and loaded with the perfect balance of sweet cranberry and savoury chicken, it’s the ultimate crowd-pleaser. Think party platter vibes but fresher, tastier, and macro-friendly.
Ingredients
3 green spinach wraps
150g cooked chicken breast, finely chopped or shredded
3 scoops Tasteless Protein by Feel Good Protein
250g light cream cheese
2 tbsps Greek yoghurt
1 tbsp 50% less sugar cranberries chopped
ÂĽ diced red onion
1 chopped spring onion
1 tbsp chopped celery
1 tbsp diced cucumber
A pinch of salt & pepper
Parsley or rocket for garnish
Method
- In a bowl, mix the shredded chicken, Tasteless Protein, cream cheese, yoghurt, cranberries, spring onion, celery, cucumber, red onion, salt, and pepper. Stir until creamy and well combined.
- Lay out your spinach wraps. Spread a thin, even layer of the chicken mixture over each wrap, leaving a small border around the edges.
- Starting from one end, roll each wrap up firmly like a log. Wrap in cling film and chill in the fridge for about 30 minutes to help them set for easier slicing.
- Use a sharp knife to cut into 2–3 cm thick rounds.
- On a large serving board, arrange the pinwheels in a triangle shape to look like a Christmas tree – wide at the bottom, narrowing to a single pinwheel at the top. Add a few extra along the bottom for a “tree trunk” look.
