Ingredients

Cookie Mix
½ cup almond flour
1 scoop Tasteless Protein Collagen by Feel Good Protein
1 tbsp Allulose
½ tsp baking powder
1 egg
1 tbsp Greek yoghurt
5 fresh raspberries

Glaze
2 tbsp Truvia sugar-free icing
1–2 tsp water

Method

  1. Add all cookie ingredients to a bowl and mix until a thick batter forms. Gently fold through the raspberries, being careful not to break them up too much.
  2. Spoon the batter onto a lined air fryer tray or into the basket. The mixture will be soft; this is the right consistency.
  3. Air fry at 170°C for 8-10 minutes, or until the cookies are just set and lightly golden.
  4. In a small bowl, mix the sugar-free icing with a little water until smooth and drizzle-ready.
  5. Let the cookies cool slightly, then drizzle over the icing. Enjoy your Raspberry Protein Air Fryer Cookies!
