Soft, sweet and packed with protein, these Raspberry Protein Air Fryer Cookies come together fast and actually keep you on track. Mix, roll, air fry… as simple and as tasty as that.
Ingredients
Cookie Mix
½ cup almond flour
1 scoop Tasteless Protein Collagen by Feel Good Protein
1 tbsp Allulose
½ tsp baking powder
1 egg
1 tbsp Greek yoghurt
5 fresh raspberries
Glaze
2 tbsp Truvia sugar-free icing
1–2 tsp water
Method
- Add all cookie ingredients to a bowl and mix until a thick batter forms. Gently fold through the raspberries, being careful not to break them up too much.
- Spoon the batter onto a lined air fryer tray or into the basket. The mixture will be soft; this is the right consistency.
- Air fry at 170°C for 8-10 minutes, or until the cookies are just set and lightly golden.
- In a small bowl, mix the sugar-free icing with a little water until smooth and drizzle-ready.
- Let the cookies cool slightly, then drizzle over the icing. Enjoy your Raspberry Protein Air Fryer Cookies!
