We’ve been totally hooked on the overnight Weetbix craze for a while, but guess what? This Rocky Road version takes the cake – or should we say, the treat! This Overnight Rocky Road Weetbix recipe is perfect for when you feel like something sweet that is a little out of the ordinary but still packed with protein. Plus, the best part? You can customise it however you like with your favorite mix-ins!
Ingredients
1 Weetbix
1 scoop of Tasteless Whey by Feel Good Protein
A splash of almond milk (or whatever milk you prefer)
160 grams yoghurt – we used Pauls Plus+ Protein 16g Protein Vanilla
2 teaspoons Woolworths Crunchy Roasted & Diced Cashews
30 grams 95% Sugar Free Milk Chocolate Melts
1 teaspoon Coconut Oil
8 Mini M&M Speckled Eggs
8 Mini Mallows
2 tablespoon Natvia Caramelts Me – Salted Caramel Topping
Method
1. Crumble 1 Weetbix in a bowl you intend to use for serving.
2. Pour a splash of almond milk over the top of the crumbled Weetbix and allow it to soak in.
3. Top the Weetbix mixture with 1 teaspoon of diced cashews and 1 tablespoon of Natvia Salted Caramel Topping.
4. In a separate bowl or container, combine 160g yoghurt, 1 Scoop of Tasteless Whey and 1 tablespoon of Natvia Salted Caramel Topping and mix.
5. Next, pour the yoghurt mixture onto the Weetbix base.
6. Top with 1 teaspoon of diced cashew, 8 Mini M & M Speckled Eggs, Mini Mallows and then pour the melted chocolate (using Noshu Chocolate with coconut oil) over the top to set.
7. Lastly, place the Overnight Rocky Road Weetbix into the fridge overnight and enjoy the next morning with some fresh berries, if you wish.
