Fruit Cake protein muffins

This recipe is based on the very famous CWA (Country Womens Association) 3 ingredient fruit cake. These muffins so easy to make and are delicious. With Tasteless Protein, you can add extra protein without even tasting it!

You can substitute the juice in this recipe for iced coffee as an example or even make grown up versions and add alcohol for a little bit of extra Christmas spirit.

All flour substitutes work with this recipe.

Ingredients

500 grams of mixed fruit
300mls of Orange Juice + 1 teaspoon of vanilla extract
1 1/2 cups of Self Raising Flour or Gluten Free Flour
2 Scoops of Tasteless Protein
1 teaspoon cinnamon
1 teaspoon nutmeg
Sugar free maple syrup to drizzle on top

Method

For best results, marinate the fruit in the orange juice and vanilla extract in a mixing bowl over night.

Add Self raising flour, Tasteless Protein, cinnamon and nutmeg into a bowl and mix together.

Once combined, place into patty cake papers or mini patty papers.

Bake in a 160 degree oven for 35-40 minutes or until your skewer comes out mostly clean.

Drizzle the tops of each cupcake with sugar free maple syrup.
