Ingredients

1 head of cauliflower
½ a chopped onion
1 cup cherry tomatoes
1 tbsp apple cider vinegar
1 tbsp worcestershire sauce
1 cup water
1 heaped tbsp minced garlic
1 Mingle Chipotle Tacos seasoning packet
500g extra lean beef mince
4 scoops Tasteless Protein by Feel Good Protein
½ cup black beans
1 tbsp corn flour mixed with ¼ cup water
1 cup shaved parmesan

Method

  1. Chop one head of cauliflower roughly, place it into a steamer, and allow it to steam on the stove until it is soft and mashed.
  2. Add the tomatoes and chopped onion to a pan on the stove with a little water. Blister the tomatoes and cook the onion until it is translucent.
  3. Add the apple cider vinegar to deglaze the pan, stirring continually.
  4. Add in the worcestershire sauce.
  5. Add in a ½ cup of water and the minced garlic.
  6. Pour the Mingle seasoning packet over the sauce base and mix.
  7. Add in your beef mince and mix again, allowing the mince to cook through.
  8. Add 4 scoops of Tasteless Protein by Feel Good Protein over the mixture and mix again. Add a little bit more water and combine.
  9. Add the black beans and corn flour mixture and mix everything until well combined. 
  10. Remove the pan from the heat once the volume of liquid has reduced.
  11. Pour the mixture into a pan with high sides.
  12. Into a clean cloth, place your cauliflower and squeeze it to remove excess liquid.
  13. Mash the cauliflower and add the parmesan cheese.
  14. Pour the cauliflower mixture over the top of the mince and add a little extra parmesan to the top if desired.
  15. Bake in the oven for 25 minutes or until the top of the dish is lightly golden. Let the dish cool slightly and serve. Enjoy your Keto Cottage Pie!
