Our Meringue Protein Pull Apart is a healthier and different take on the traditional pavlova with just a fraction of its calories with added bonus of protein. Light and airy, you can top this guilt-free indulgence with various type of berries or your personal choice of fruits – whatever tickles your fancy! Serve this on your next family gathering or party – they are pillowy clouds of sweetness which will have you coming back for more!
6 egg whites
1 cup Lakanto Sugar Substitute
1 tsp white vinegar
4 scoops Tasteless Protein by Feel Good Protein
1 teaspoon cornflour
1 teaspoon vanilla extract
Firstly, preheat oven to 100 degrees and line a large tray with baking paper.
Then, wipe out a large glass or metal bowl with white vinegar and make sure that it is very very clean.
Separate the whites of 6 eggs.
Place the whites into the cleaned bowl and begin to beat with an electric mixer.
When soft peaks form, start to add the Sugar substitute a little at a time until all of it is beaten in.
Add teaspoon of vinegar and vanilla extract and beat again.
Add in the Cornflour and Tasteless Protein and beat again for the final time.
Once your mixture has turned to stiff peaks, it is time to place the meringue mixture onto your baking tray that has been lined with baking paper.
Spoon as many small mounds onto the tray as you would like to have – we made 6 and another smaller pavlova.
Place the tray straight into the oven and allow the meringues to cook for 1 hour. Then turn the oven off and allow it to completely cool before opening the door.
Once they cool down, place the meringues onto your serving platter. Then dollop with a beautiful sweetened yoghurt of your choice and top with fresh berries or whatever toppings you love. Now, enjoy the Meringue Protein Pull Apart.
